Made with 4 Italian legumes that must have followed the LEGÙ® production process, that is, before being ground and made into flour they are: soaked, steamed whole to avoid losing mineral salts, peeled and dried at low temperature. It can be used as a substitute for:
• eggs for pancakes, muffins, shortcrust pastry;
• cornstarch and other starches to thicken creams;
• gelatine or agar agar for pudding and panna cotta;
• cereal flour in the most classic Italian recipes.

Without additives, naturally rich in vegetable proteins with high fibre content, Italian origin.
Balanced recipe. DOES NOT CONTAIN GLUTEN, but it allows you to obtain an elasticity similar to gluten and is perfect for making everything at home, from SWEET (cakes, biscuits, muffins, creams, puddings) to SAVOURY (pizza, breadsticks, savory pies, crepes, béchamel).

Instructions for use
Excellent thickener and stabilizer. High absorption power. Use as a normal flour, increasing the wet parts from traditional recipes as it absorbs a lot of liquids. If you want to add natural yeasts you must first mix the flour with liquids at temperatures of 25°C.
AS AN EGG SUBSTITUTE: For 100g of egg, weigh 15g of mixture and dilute with 76g of water and 9g of oil.
