Finimondo Appassimento di Pellegrino is a blend of native and international red grapes based on Nero d'Avola and Syrah. The vineyards in southwestern Sicily have their roots in soil characterized by a silty and clayey matrix, rich in minerals, called Terra Grande; we are between 250 and 600 meters above sea level in a place that experiences high thermal temperatures, mitigated by the great windiness. During the harvest, the natural dehydration of the grape is exploited, obtained through the technique of cutting the shoot which leads to slow concentration. Long maceration and fermentation are then conducted with temperature regulation, and the following refinement lasts for 4 months in wood.

End of the world! of Pellegrino has an intense ruby color. The nose is penetrating, with intense notes of cherries and plum jam, rose hips, black pepper, cinchona and liquorice. When tasted it has freshness of pomegranate, softness of blackberry and alcoholic generosity. Very good with cured meats, such as with cheese croutons and vegetables, for example gorgonzola and Sicilian-style aubergines.
