The Pinot Grigio from Pighin comes from 100% Pinot Grigio grapes sourced from vineyards facing Southwest, located on soils formed by the so-called "ponca," an alternation of marls and sandstones rich in minerals, at an altitude between 150 and 180 meters above sea level. During the white vinification process, alcoholic fermentation took place in stainless steel at a temperature of 16-20°C, and in small part in barriques and tonneaux, for a period of 15-20 days. The aging occurred for several months in stainless steel, in contact with the fine lees.
PINOT GRIGIO COLLIO PIGHIN: THE TASTING
The Pinot Grigio Collio from Pighin is characterized by a straw yellow color with brilliant reflections. On the nose, it opens with aromas of yellow-fleshed fruits followed by hints of acacia flowers and notes of medicinal herbs. The taste is savory and balanced, with a distinct freshness. The fruity and flint-like finish is persistent. At the table, it pairs well with cheeses, vegetarian dishes, and delightful seafood preparations. It is excellently enjoyed with cheeses and vegetarian dishes as well as with flavorful seafood recipes. A must-try with a classic white seafood sauté.
