The Roggiano from Cantina Vignaioli di Scansano is the most typical interpretation that the cooperative gives to the Morellino di Scansano denomination. Made up of 95% Sangiovese and 5% Alicante, it owes its grapes to various vineyards at 200 to 300 meters above sea level, with soils mainly composed of sandstone and silt. The harvest takes place at the end of September; the grapes are harvested at perfect phenolic ripeness and protected with the use of carbonic snow. Maceration takes place at heat (35°C) for 12 hours; fermentation follows at a controlled temperature (max 27°C). After 7 days of fermentation with the skins, the wine is refined on the fine lees until the malolactic fermentation takes place (in November), then it is transferred to another steel fermenter for 4 months, always with the fine lees. Once bottled, a further 3 months pass before being released on the market.
MORELLINO DI SCANSANO ROGGIANO WINEMAKERS DI SCANSANO: TASTING
The Roggiano from Cantina Vignaioli di Scansano has a full ruby color with youthful purple reflections. On the nose it has a lot of fruit, with notes of cherry compote, Moro orange, ripe blackberry, a nice floral, sweet spiciness and references to the undergrowth. In the mouth it is lively, with freshness and beautiful tannins softened by the fruit. Perfect with a selection of Maremma cured meats and pecorino cheeses, as with wild boar bread gnocchi.
