Pecorino Casadonna by Feudo Antico is a high altitude wine, produced mainly from Pecorino grapes grown in the Casadonna area of the municipality of Castel di Sangro (AQ). The vineyard is located on silty-clayey soils with abundant presence of skeleton and good organic substance, at an altitude of approximately 862 meters above sea level. During winemaking, alcoholic fermentation took place spontaneously at a temperature of 16-18°C thanks to the yeasts present on the grapes. The refinement took place for 6 months in acacia barrels in contact with the yeasts; no clarification or filtration operations were carried out before bottling. This collectible label was born from the collaboration between Feudo Antico and the starred chef from Abruzzo Niko Romito.
PECORINO CASADONNA FEUDO ANTICO: TASTING
The Pecorino Casadonna by Feudo Antico has a straw yellow color with greenish reflections. On the nose it offers aromas of yellow pulp fruit and white flowers together with clear citrus notes. On the palate it is intense and balanced, with great freshness and minerality. Long citrus and saline finish. At the table it pairs very well with cheeses and vegetarian dishes as well as tasty seafood recipes based on white fish, molluscs and crustaceans.
