The grapes are carefully selected and subjected to a gentle crushing and destemming, followed by a controlled fermentation for 8-10 days. The distinctive feature of this wine is the "ripasso" on the Amarone pomace, carried out every February. This second fermentation enhances the tannins, providing longevity and enriching the wine with the typical aromas of Amarone. After malolactic fermentation, the wine ages for 12-18 months in medium and large barrels and rests for at least 6 months in the bottle.
