Bellussi's Prosecco di Valdobbiadene Superiore Millesimato Brut is produced from a selection of Glera grapes grown on the hills of Conegliano Valdobbiadene, the heart of the denomination, where the soils are clayey-limestone. The vinification takes place with the long Charmat method, i.e. refermentation in an autoclave with a stay on the yeasts prolonged compared to normal times, which gives the wine greater elegance and aromatic complexity, as well as finesse in the perlage; the residual sugar is between 9 and 10 g/L. Bellussi has always been sensitive to the use of sulphites, which is why it only uses around 50% of the allowed limit.
PROSECCO VALDOBBIADENE MILLESIMATO BRUT BELLUSSI: THE TASTING
Bellussi's Prosecco di Valdobbiadene Superiore DOCG Brut has a bright straw color. On the nose it smells of pear jelly, jasmine, hawthorn, pineapple sage and lemon; in the mouth it remains fresh and aromatically in line with the nose, with fine and persistent perlage. A decidedly versatile wine, it is delicious with summer dishes such as buffalo mozzarella, Parma ham and aubergines in oil.
