Delivery and Returns

The Sauvignon of Livon is made from 100% Sauvignon Blanc grapes harvested by hand. The vineyards of origin, trained in guyot, are located on marl and clay soils in the area of Dolegna del Collio (GO). In the winery, the grapes underwent a cold pre-fermentation maceration of 8 hours to facilitate the extraction of primary aromas. The alcoholic fermentation took place in stainless steel at a controlled temperature of 18°C. The aging lasted 5 months in stainless steel plus a short period in the bottle.
SAUVIGNON LIVON: TASTING
The Sauvignon Collio of Livon presents itself with a pale yellow color with greenish reflections. On the nose, it displays aromas of yellow tropical stone fruit and white flowers combined with herbaceous notes of tomato leaf. The palate is soft and balanced, with persistent mineral freshness. Ideal as an aperitif, it pairs well with cheeses and vegetarian dishes as well as with tasty seafood preparations, especially those based on shellfish.
