Taggiasca olives, being rich in monounsaturated fatty acids, help lower the bad cholesterol, raising the good one. I am therefore a real panacea for our health.
For all these reasons they represent one of the excellence of our gastronomy, internationally recognized and used in our kitchen, both alone and in the realization of dishes of the Italian tradition or contemporary cuisine.
We offer them pitted and preserved in their renowned and precious extra virgin olive oil DOP. For quick and practical use, both as an aperitif or in salads or hot dishes, such as sauces or dishes based on meat or fish.

Ingredients: Pitted taggiasca olives 61%, extra vergibne olive oil 36%, salt, natural flavors, acidity regulator, citric acid.
Notes: Taggiasca olive is a typical product of the western Ligurian region and in particular of the province of Imperia. Implanted in Taggia by the monks of San Colombano, coming from the island of Lérin, in French Provence. Since January 1997, the protected designation of origin has been established for this crop.
The Taggiasco olive tree reaches considerable size, has well open branches, a very twisted and often inclined trunk. Productivity is high and constant. The tasty fruit with a delicate flavor, elongated in shape and black-violet color, ripens late in January. The harvest takes place with the traditional method of bacchiatura, which consists of beating the branches with a stick, so that the fruits fall on the sheets spread at the base of the plants. The extra virgin olive oil obtained from it has a fragrance and a fruity taste, with a strong sensation of sweet. The excellent organoleptic qualities make it a product of great value, also known for its low acidity rate, which usually does not exceed 0.4%.
Shelf life: 24 months.
Storage: Store in a cool, dry place away from heat and direct light. After opening, fill with oil and store in the refrigerator.
