The Aglianico del Vulture Don Anselmo by Paternoster is dedicated to the founder, who in 1925 sold the first bottles of Aglianico under the family brand. The vineyards extend over 4 hectares in the municipality of Barile, in the Gelosia district, with 50-year-old vines located at 600 meters above sea level, which are a historical and ampelographic heritage of the company and produce very high quality with very low yields. The porous tuff soil retains winter rains, thus becoming an important reserve during the hot and dry summer months of Basilicata, while significant day-night temperature excursions enhance the formation of aromas. The summer of 2015 was particularly hot and dry, so the harvest was done early, bringing rich and healthy grapes to the winery. Fermentation and maceration on the skins in steel lasted for 15/18 days (depending on the parcel) at 25/28 °C. The aging was then carried out in large Slavonian oak barrels for 50%, and in second-passage French barriques for the remaining 50%, for a duration of 24 months, followed by an additional 12 months in the bottle. AGLIANICO DEL VULTURE DON ANSELMO PATERNOSTER: THE TASTING Don Anselmo by Paternoster is a deep and luminous ruby red. On the nose, it is generous, with notes of blueberry and marasca in spirit, cocoa beans, dark spices, tobacco, leather, balsamic menthol hints, and graphite minerality. The palate is powerful, voluminous, full of fruit, fresh and mineral, with powerful and noble tannins and an extremely long finish. It pairs excellently with pot roast of Podolica beef.
