Gilpin's Gin, “The Spirit of England”, viene prodotto a Londra, dove viene distillato con il metodo tradizionale “pot still”. L'acqua utilizzata nella produzione provizione dal Lake District (Holy Well Spring, Cartmel), luogo in cui nasce filtrata in modo naturale da pietre calcaree e torba formatasi nel tempo.
E' un Extra Dry Gin della categoria London Dry, che si caratterizza rispetto a molti altri gin in commercio da un sapore decisamente secco, ottenuto grazie ad un uso ponderato dei componenti botanici. La distillazione viene effettuata con metodi artigianali in piccole quantità (small batches).
Gilpin's Gin viene distillato per 5 volte con 8 botanicals in perfetto equilibrio tra loro: bacche di ginepro, salvia, borragine, buccia di lime, buccia di limone, semi di coriandolo e radice di angelica.
La scelta degli ingredienti per la ricetta del Gilpin's Gin, ideata personalmente da Matthew Gilpin, proprietario dell'azienda, è un'interpretazione personale del London Dry. L'intento è stato quello di creare un grande gin, unico e semplice ma allo stesso tempo di grande forza. Pur rimanendo fedele alla tipicità del vero london dry, la decisione di utilizzare due tra le erbe preferite da Matthew, salvia e borragine, ha permesso di donare al gilpin's Gin il suo carattere secco ed erbaceo unico.

Gilpin's Gin is distilled in an artisanal way and in small quantities 5 times, with eight different types of herbs selected. Distilled in London with water from the Lake District (Holy Well Spring, Cartmel, England) where the water is filtered with limestone and coals from willow trees. The characteristic extra dry flavor is due to the use of sugary ingredients.
