The Cesanese del Piglio Sapiens by Federici is made from 100% Cesanese grapes grown in clayey soils in the Anagni and Paliano (FR) area, at an average altitude of 450 meters above sea level. Following alcoholic fermentation and maceration on the skins, it is aged for 4 months in steel. An organic red with a proud and decisive character, the result of a company style based on a wise balance between tradition and innovation. The DOCG Cesanese del Piglio was established in 2011 and includes, in addition to Anagni and Paliano, the municipalities of Piglio, Acuto, and Serrone, all in the province of Frosinone. The territory is characterized by the presence of superficial "red soils," naturally rich in iron and aluminum oxides, which are not suitable for intensive use and are well-suited for quality viticulture.
CESANESE DEL PIGLIO SAPIENS FEDERICI: TASTING
The Cesanese del Piglio DOCG Sapiens by Federici presents itself in the glass with an intense ruby red color with garnet reflections. On the nose, it releases aromas of ripe red fruit combined with hints of cloves and dark spices, along with gentle notes of underbrush. On the palate, it is soft and warm, supported by an excellent structure and a dense tannic framework with a finish featuring fruity notes. At the table, it pairs well with cured meats and aged cheeses, as well as succulent meat dishes based on red meats.
