The Count of the Viper Umbria Bianco IGT Castello della Sala by Antinori is made from Sauvignon Blanc (80%) and Sémillon (20%) grapes grown in vineyards that rest on clayey-calcareous soils rich in marine fossils, at an altitude. After the manual harvest, the grapes were cooled using a refrigerated conveyor to preserve the varietal aromas as much as possible before pressing. The alcoholic fermentation took place in. Before commercialization, the Count of the Viper Umbria Bianco IGT Castello della Sala by Antinori aged for a few months in steel and for an additional 12 months in the bottle.
COUNT OF THE VIPER CASTELLO DELLA SALA ANTINORI: THE TASTING
The Count of the Viper Umbria Bianco IGT Castello della Sala by Antinori presents a straw yellow color with greenish reflections. On the nose, it expresses aromas of peach, lychee, and yellow tropical stone fruit intertwined with hints of citrus and delicate vegetal notes. The palate is fresh and has good structure, supported by a lovely minerality that lingers on the finish. At the table, it pairs well with fresh and semi-aged cheeses as well as vegetarian dishes and tasty seafood recipes based on white fish, mollusks, and crustaceans. It is also worth trying with white meats.
