The Rosé Principe di Granatey is a selection from the Colomba Bianca wineries. First produced in 2012, this Rosé comes from Nero d'Avola vines located between 300 and 500 meters in altitude, harvested in the first and second decade of September. The grapes are pressed and cold-soaked with the skins directly in the press for several hours; they are then gently pressed. After natural decantation, the alcoholic fermentation takes place in steel tanks at a controlled temperature of 16° C (temperature control ensures that fermentation develops slowly and steadily, preventing fermentation blocks that can kill wine yeasts and potentially trigger fermentations by unsuitable fungi or bacteria; for whites and rosés, this is particularly important to preserve aromas).
ROSÉ PRINCIPE DI GRANATEY COLOMBA BIANCA: TASTING
The Rosé Principe di Granatey from Colomba Bianca has an antique pink color with mauve hues; the nose is citrusy with pink grapefruit, fruity with pomegranate, and floral with rose petals. The palate aromatically aligns with the nose, being quite fresh and persistent. Good with grilled octopus and red beet cream.
