Ottin's Pinot Noir was obtained from 100% Pinot Noir grapes grown in the territories of the municipalities of Quart and Saint Cristophe, in the province of Aosta. The vineyards of origin, exposed to the South and South-East, are rooted in morainic and sandy soils, at an altitude between 650 and 700 meters above sea level. The manual harvest was carried out with a yield of 70/80 quintals per hectare. The winemaking process included a pre-fermentative maceration phase and an alcoholic fermentation lasting approximately 10 days activated by indigenous yeasts. The refinement took place 55% in large wood (20-30 hectolitres) and the remaining 45% in barrique for a period of 12 months.

Ottin's Pinot Noir presents a pale ruby red color with brilliant reflections. On the nose it releases aromas of red fruits that intertwine with floral hints of geranium and violet and notes of liquorice and dark spices. Reminders of black tea and tobacco complete the olfactory profile. The sip is soft and elegant, enhanced by a fine tannic texture and a delicate fresh-savory trail that persists in the long finish. At the table it pairs well with mature cheeses as well as tasty land recipes based on red meat or game.
