The Viognier Soente by Falesco is made from 100% Viognier grapes grown in the area of Castiglione in Teverina (VT). The original vineyard covers an area of 5 hectares and is located on crumbly, rocky soils, at an average altitude of 300 meters above sea level. The winemaking process included a phase of cryomaceration (cold maceration that allows the extraction of the primary aromas of the grape) at 10°C for 5 hours. The alcoholic fermentation took place in steel at a temperature between 13° and 15°C. Before marketing, the wine rested for 4 months in the bottle. Born from an important experimental study on different clones of Viognier conducted by the Cotarella family, this young white reflects its open and sincere character even in its name, Soente, derived from the elision of a consonant from the word "sovente".

The Viognier Lazio IGP Soente by Falesco presents itself in the glass with a straw yellow color with greenish reflections. The nose is filled with clear scents of white flowers, apple, peach, and yellow-fleshed fruit combined with delicate notes of Mediterranean citrus. The sip is full and harmonious, enhanced by a lively freshness and a distinct minerality that lingers on the finish. At the table, it pairs well with fresh cheeses, vegetarian dishes, and tasty seafood recipes based on white fish, shellfish, and crustaceans.
